Tiny Gingerbread Houses!

Last year, on Christmas day, I saw these tiny houses on Pinterest and gifted myself the cookie-cutter kit on Amazon. I forgot about them until my kids requested a gingerbread house decorating party with their friends. Of course, they wanted massive Hansel and Gretel-style candy houses, but I talked them down, way down, to these houses so tiny they would fit on a mug.


We are gluten-free, so I was nervous about a cookie dough recipe that would be sturdy enough to build with. I have tried many gingerbread recipes, and the one by Nicole Hunn on her food blog Gluten Free on a Shoestring is my new favorite. It held up, and the recipe is meant for building a gingerbread house.


*Notes for the recipe: I used Bob's 1-1 flour, added extra cinnamon and ginger, and included a bit of ground cloves and cardamom. We love spicy gingerbread around here.
